I was first introduced to green beans in the American South. I wondered why anybody would want to chew on soggy legume waste. Then I was introduced to fresh green beans and better yet, steamed fresh green beans. I added my touch, but really only to emphasize the naturally springy and sweet personality of the green bean.


Two big handfuls of green beans

Juice of 1 lemon

1 teaspoon of salt

Wash the beans.

Cut the ends off the beans.

Add water to pot, add the beans to steamer and place the steamer over the pot. Cover the steamer and over medium high heat let the water boil and steam the beans for 7-9 minutes, or until your desired softness. 

Mix the lemon juice and salt with your beans, curl up on the sofa, bring the bowl to you like a bowl of popcorn and eat with your fingers. Or be civilized and use it as a bright side dish. Enjoy!
