The onion is a self-dicing machine if operate it properly. Here is how to cut an onion to get the perfect little cubes with minimal tears. Fun fact about onions, the bulbous part is made of up non-photosynthetic leaves, and the little strands at the bottom are the main root system.

Have an onion.

Cut off the ends.

Cut onion in half lengthwise. Peel. I like keeping as much of the leaves as possible so I just peel the thin crispy shell.

Lay one half flat and cut widthwise, keeping the slices together.

Bring the slices together again and cut lengthwise, letting the layers separate into little diced onion bits. Enjoy!
